It is an unaged, acid-set, non-melting farmer cheese or curd cheese that is made by curdling heated milk with lemon juice, vinegar or any other food acids. Its crumbly and moist form is called chhana or chhena in eastern India.

It is a vegetarian alternative to chicken tikka masala and other meat dishes. Next is Karahi Paneer Masala one of the variants of it. It will be called as Indian Karahi Paneer Masala, when it is made using Karahi which is also known as kadai, korai, karai, kadhi, kadah and kadhai or cheena chatti etc, is a type of thick, circular, and deep cooking-pot.
